Red Mole with Chicken

Continuing my recent Mexican theme, started the day with huevos rancheros, then made Rick Bayless’s chicken in red mole sauce for dinner (here is a slightly different version than the one in the cookbook: http://www.rickbayless.com/recipe/classic-red-mole/), and here is someone’s excessively photographed version (http://www.thepauperedchef.com/2010/06/my-first-mole-rich-red-mole-with-chicken.html).
Also made a batch of salsa verde, a side of okra with tomatoes, peppers and epazote, and some turkey chorizo which I look forward to eating with eggs for breakfast.
