Red Mole with Chicken

Continuing my recent Mexican theme, started the day with huevos rancheros, then made Rick Bayless’s chicken in red mole sauce for dinner (here is a slightly different version than the one in the cookbook:, and here is someone’s excessively photographed version (
Also made a batch of salsa verde, a side of okra with tomatoes, peppers and epazote, and some turkey chorizo which I look forward to eating with eggs for breakfast.

Seriously thinking about doing the even more elaborate turkey in mole poblano sauce for thanksgiving (
