Pita

Pita is actually quite easy to make at home, and well worth the effort. Its also fairly quick, although not quite as effortless as making a loaf of bread in the machine. 

Ingredients

  • 3/4 cup King Arthur  white whole wheat flour
  • 2 cups Hecker’s all-purpose flour
  • 2 tsp yeast
  • 3/4 tsp sugar
  • 3/4 tsp salt
  • 1 cup warm water
  • 2 TB olive oil

Directions

  1. Add the ingredients in the order recommended by the bread machine
  2. Process on the Quick Dough setting (about 45 minutes)
  3. divide the dough into 8 equal portions, and roll each into a ball.
  4. Allow to rise while the oven preheats to 475F with a pizza stone placed on a rack in the middle of the oven.
  5. Once risen to double in size, roll out each ball into a flat disc. 
  6. Bake 1-4 at a time depending on how many fit on the stone, 2 minutes on the first side, then turn and bake for 1 additional minute on the other side. They should puff up while baking, to form the pocket. Don’t overbake.
  7. Eat immediately, or cool to room temperature and freeze.
